Tomato butter beans with cumin

Big, soft beans in a cumin-scented tomato sauce, made for mopping up with bread.

If tomato soup is your comfort food, butter beans turn those familiar flavours into dinner.

Here’s how.

    Soften the aromatics

    Heat oil in a deep pan over medium heat. Cook onion for 6 minutes, then garlic and cumin for 30 seconds.

    Simmer the tomatoes

    Add tomatoes, salt and the measured water. Simmer for 10 minutes, stirring occasionally.

    Warm the beans

    Add drained butter beans and simmer for 5 minutes, until hot through. Toast the bread.

    Finish and serve

    Stir in parsley and lemon juice. Serve in bowls with the toast.

Crush a spoonful of beans into the sauce if you want it a little thicker.
