Smoky beef & bean chilli

A mild, smoky beef and bean chilli with tomatoes, lime and a bowl of rice.

A family chilli with smoke instead of extra heat. Smoked paprika changes the flavour without needing fresh chillies.

Here’s how.

    Soften the onion

    Heat oil in a saucepan over medium heat. Cook onion for 5 minutes.

    Brown the beef

    Add beef, breaking it into small pieces. Cook for 6–8 minutes until browned. Stir in cumin and paprika.

    Simmer together

    Add beans, tomatoes, measured water and salt. Simmer for 15 minutes, stirring occasionally. Check the beef reaches 71°C / 160°F.

    Rice and lime

    Meanwhile cook rice following its packet. Serve chilli over rice with lime juice to taste.

Use mild smoked paprika if you want warmth without chilli heat.
