Smoky black bean tacos

Keep everything you love about taco night and let black beans take the lead.

Here’s how.

    Soften the onion

    Heat oil in a pan over medium heat. Soften onion for 6 minutes, then stir in paprika and cumin.

    Warm the beans

    Add beans, water and salt. Simmer for 5 minutes and crush a few beans with the back of a spoon.

    Prepare the fresh things

    Slice avocado and toss tomatoes with half the lime juice. Warm tortillas in a dry pan, 20–30 seconds a side.

    Build at the table

    Fill tortillas with beans, avocado and tomatoes. Serve remaining lime in wedges.

Keep warmed tortillas wrapped in a clean tea towel so they stay flexible.
