Sesame salmon & cucumber noodles

If a noodle bowl is familiar, a little toasted sesame oil adds aroma without making a complicated sauce.

Here’s how.

    Cook the salmon

    Heat vegetable oil in a non-stick pan over medium heat. Cook salmon for 4–6 minutes per side, depending on thickness, until the centre reaches 63°C / 145°F.

    Prepare the noodles

    Meanwhile cook noodles following the packet. Drain well.

    Dress the bowl

    Mix sesame oil, soy sauce and vinegar. Toss with the noodles, cucumber and spring onions.

    Serve gently

    Divide noodles between bowls. Place salmon on top, or flake it into large pieces, checking carefully for bones.

Use toasted sesame oil in the dressing, not as the frying oil; a small amount brings a lot of flavour.
