Peanut & lime chicken
A gently simmered peanut sauce with lime, ginger and enough richness to coat every grain of rice.

Here’s how.

Rice first
Cook the rice according to its packet. Keep covered until needed.

Brown the chicken
Heat oil in a large pan over medium-high heat. Cook chicken strips for 6–8 minutes, turning, until browned. Add ginger and garlic for 30 seconds.

Simmer the sauce
Stir in coconut milk, peanut butter, soy sauce and the measured water. Add broccoli and gently simmer for 8–10 minutes. Check chicken reaches 74°C / 165°F and broccoli is tender.

Finish with lime
Take off the heat. Add lime zest and juice, then serve over rice. Loosen the sauce with water if needed.
Add the lime at the end so its flavour stays fresh.
