Mushroom & sesame noodle parcels
Mushrooms, pak choi and noodles baked in individual parcels that open at the table.

The flavours of a noodle bowl become a small occasion when each serving steams in its own parcel.
Here’s how.

Prepare the filling
Heat oven to 200°C / 390°F (180°C fan). Cook noodles for 1 minute less than the packet time, then drain. Mix soy sauce, vinegar, sesame oil, ginger and water.

Build the parcels
For each serving, put a large sheet of baking parchment on top of foil. Divide noodles, mushrooms, pak choi and spring onions between them. Spoon the sauce over, then fold parchment and foil tightly around the filling, leaving room for steam.

Bake together
Put parcels on a baking tray and bake for 20–25 minutes until the mushrooms and greens are tender and everything is steaming hot. Open one carefully to check.

Open at the table
Set each parcel on a plate. Open away from your face to release steam and scatter sesame seeds over the noodles.
The foil supports the paper and helps seal in steam. Keep the food inside the parchment layer.
