Miso chicken & broccoli rice

If stir-fried chicken is familiar, miso adds a rounded savoury flavour to the pan sauce.

Here’s how.

    Start the rice and sauce

    Cook rice following the packet. Mix miso, syrup, vinegar and half the measured water in a small bowl.

    Brown the chicken

    Heat oil in a wide non-stick pan. Cook chicken over medium-high heat for 7–8 minutes, turning.

    Steam the broccoli

    Add broccoli and the remaining measured water. Cover, reduce heat to medium and cook for 4–5 minutes, until broccoli is tender and chicken reaches 74°C / 165°F.

    Glaze and serve

    Uncover, add the miso mixture and stir over low heat for 1–2 minutes until everything is coated. Add a splash of water if the sauce is too thick. Serve over rice.

Turn the heat down before adding miso and syrup so the sauce does not catch.
