Miso beef & mushroom bowls

Browned beef and mushrooms in a savoury miso glaze, spooned over rice with spinach.

A familiar beef-and-mushroom pairing gets deeper flavour from miso instead of a gravy mix.

Here’s how.

    Cook the rice

    Cook rice following the packet. Whisk miso, vinegar, maple syrup and measured water in a bowl.

    Brown the mushrooms

    Heat half the oil in a wide frying pan. Cook mushrooms over medium-high heat for 8 minutes until golden; transfer to a plate.

    Cook the beef

    Add remaining oil and beef to the pan. Break it up and cook until browned and the meat reaches 71°C / 160°F.

    Glaze the bowl

    Reduce heat. Return mushrooms, add miso mixture and spinach, and stir for 2 minutes until greens wilt and the sauce is hot. Serve over rice.

Brown the mushrooms separately so the beef has room to colour too.
