Grated-onion beef flatbreads

Small beef patties, cool yogurt and crunchy salad tucked into warm flatbreads.

If burgers are familiar, grate the onion into the mince for a softer texture and serve the patties in flatbread.

Here’s how.

    Grate and mix

    Coarsely grate onion. Mix it and its juices with beef, cumin and salt. Shape into small flat patties about 1.5 cm thick.

    Cook the patties

    Heat oil in a frying pan over medium heat. Cook patties for 4–5 minutes per side, until their centres reach 71°C / 160°F. Work in batches if necessary.

    Make a quick salad

    Toss cucumber and tomatoes with lemon juice. Warm flatbreads following the packet.

    Fill and fold

    Spread yogurt over warm flatbreads. Add patties and salad, then fold and eat.

Keep the patties fairly thin so they cook through before the outside gets too dark.
